Superb ‘pulled’ aubergine & unlit bean BBQ burgers

Elements:
2 immense aubergines, pricked everywhere with a fork
1 tbsp olive oil
1 immense pink onion, thinly sliced & chopped
1 yellow or orange bell pepper, thinly sliced
2 sliced tomatoes
1 heaped tsp garlic granules
2 tsp smoked paprika
1 tbsp brown sugar
1 tsp brittle oregano
5 tbsp BBQ sauce
400g can unlit beans, tired
4 burger buns, toasted and evenly buttered
Rocket and chopped coriander to garnish, shredded lettuce and coleslaw
Mode:
1. Warmth the BBQ to top 280C/300C and grill the aubergine, turning every now and then, till blackened and cushy, about 20-30 minutes. Put aside to chill.
2. After warmth oil in a immense pan over a medium warmth, upload onion and fry till softened and yellowish, about 10 minutes. Drop BBQ to 200C/220C.
